Potato Pancakes with Apple Puree with thermomix

In this recipe, we will explore how to prepare delicious potato pancakes accompanied by a smooth applesauce. This dish, ideal for four people, combines the creaminess of the potatoes with the sweetness and freshness of the apples.

Ingredients

For the applesauce:

1 untreated lemon

1000 g of apples in pieces

75 g of sugar

1 cinnamon stick

3 tablespoons of dry white wine

30 g of water

For the potato pancakes:

1 onion halved

1000 g of peeled and chopped potatoes

20 g of type 405 flour

2 eggs

1.5 teaspoons of salt

1 pinch of freshly ground black pepper

A little canola oil for baking


Preparation of the applesauce:

Wash the lemon and peel two wide strips of skin. Squeeze the lemon juice.

In a pot, add the apples, lemon juice and zest, sugar, cinnamon, white wine, and water. Cook over medium heat for 15 minutes.

Remove the lemon peel and cinnamon stick. Blend the mixture until smooth and homogeneous. Set aside.

Preparation of the potato pancakes:

Place the onion in a food processor and chop finely.

Add the potatoes to the processor and chop until small pieces are obtained.

Add the flour, eggs, salt, and pepper to the processor. Mix until all ingredients are well incorporated.

Preheat the oven to 80°C and heat oil in a pan over medium heat.

Pour 4-5 tablespoons of potato mixture into the hot pan and fry until golden on both sides, approximately 5-7 minutes per side.

Once golden, place the pancakes on a tray and keep them warm in the oven.

Additional tips

You can serve the potato pancakes with a generous portion of applesauce.

For an extra touch of flavor, you can sprinkle a little cinnamon powder over the applesauce before serving.
