Croissants with Thermomix


300 g flour
80 ml water
80 ml milk
2 tablespoons sugar
1 tablespoon bakers yeast
1 tablespoon butter
1/2 teaspoon salt
150 g margarine
egg yolk and milk for glazing

Thermomix version:

In the mixing bowl, add milk, water, sugar, and yeast: 37°C, speed 2, 3 minutes 30 seconds.
Add butter: 3 minutes, 37C, speed 2.
Add flour and salt: kneading mode, 5 minutes.
Transfer to a bowl and let it rise.
