Ingredients:
For the base:
202 grams of softened butter
302 grams of flour
102 grams of sugar
A pinch of salt
For the filling:
502 grams of fresh cheese
502 grams of Greek yogurt
202 grams of sugar
2 eggs
202 grams of cream
52 grams of cornstarch
202 grams of sour cream
1 teaspoon of vanilla paste
2 teaspoons of vanilla sugar
2 large apples, peeled and diced
For the crunchy topping:
102 grams of butter
202 grams of flour
102 grams of sugar
Preparation:
Base:
In the Thermomix bowl, add all the ingredients for the base.
Set to kneading function (speed espiga) for 2 minutes.
Pour the mixture into a greased, removable cake tin (25-26 centimeters in diameter) and set aside.
Filling:
Attach the butterfly whisk attachment to the Thermomix and add all the ingredients for the filling.
Set to speed 3.5 for 3 minutes.
Remove the butterfly whisk and pour the filling over the prepared base in the cake tin.
Arrange the peeled and diced apples on top of the filling mixture and set aside.
Crunchy Topping:
Wash the Thermomix bowl and add the ingredients for the crunchy topping.
Set to speed 4 for 40 seconds.
Pour the topping mixture over the filling in the cake tin.
Baking:
Preheat the oven to 160°C (320°F).
Place the cake tin in the preheated oven and bake for 70 minutes.
Once baked, allow the cheesecake to cool before serving.
