Apple yeast braid with Thermomix

Hello colleagues. Today I bring you a new recipe. A filled apple braid, super delicious. I highly recommend it and it is very easy to prepare.

INGREDIENTS: DOUGH:

  • 500 g strong flour
  • 14 g fresh yeast
  • 200 ml milk
  • 60 g sugar
  • 40 g honey
  • 80 ml sunflower oil
  • 1 egg
  • Zest of 1 lemon
  • Pinch of salt

FILLING:

  • 3 apples
  • 100 g sugar
  • Juice of half a lemon
  • 30 g butter
  • Ground cinnamon (optional)

PREPARATION: DOUGH:

  1. Sift flour, 20 seconds / Speed 8. Set aside and reserve.
  2. Heat milk and add the crumbled yeast and a tablespoon of sugar, stir and let rest for 15 minutes.
  3. In the mixing bowl, add the egg, remaining sugar, honey, lemon zest, oil, and the milk with yeast, 5 seconds / Speed 4, then add the reserved flour and salt, 10 seconds / Speed 4. Let rest for 20 minutes to hydrate the flour particles.
  4. Then perform 3 kneading cycles of 2 minutes / Kneading level, with a 5-minute break between each cycle. Transfer to a lightly greased bowl and cover. Let the dough rise (about 2 hours and 30 minutes, depending on room temperature). After this time, degas the dough (remove the air after rising) by kneading it by hand for a minute.

FILLING:

  1. Peel and dice the apples.
  2. In a pan, melt the butter, then add the apples, sugar, and lemon juice, stew over low heat, stirring occasionally, then optionally add cinnamon.
  3. Transfer to a bowl and let cool.

SHAPING AND BAKING:

  1. Dust the work surface with flour, place the dough on it and roll it out with a rolling pin, forming a rectangle of about 50×36 cm.
  2. Then divide the dough into three parts.
  3. Place the cooled apple filling in the center of each part, not reaching the edges. Then cover with the dough and seal the seams.
  4. Shape the three parts into a braid and place on a baking sheet lined with parchment paper.
  5. Cover and let rest for 40 minutes.
  6. Preheat the oven to 170°C, top and bottom heat.
  7. Brush with beaten egg and sprinkle with moist sugar.
  8. Bake for about 25-30 minutes.
  9. Turn off the oven and let cool on a wire rack.
