The secret to great dough lies in its ability to rise in a controlled, warm environment. Using the Varoma bowl with the Thermomix "Fermentation" function creates this ideal setting:
Add the ingredients to the Thermomix bowl
Pour 500 g of water and 30 g of lemon juice into the bowl. This will create the steam necessary to maintain the correct temperature in the Varoma.
Grease the Varoma bowl
Apply a thin layer of oil to the inside of the Varoma bowl to prevent the dough from sticking and to make handling it easier later.
Form a dough ball
Knead the dough until it has a smooth texture and shape it into a ball. Place it carefully inside the Varoma bowl.
Close the bowl
Cover with the Varoma lid, ensuring it is well sealed.
For TM6
Settings: 1 hour / 60°C / "Fermentation" function.
During this time, the water heats up, and the blade stops automatically, creating the perfect environment for the dough.
For TM5 and TM31
Alternative settings: 1 hour / 60°C / speed 1.
While these models do not have the "Fermentation" function, a similar effect can be achieved using this configuration.
The dough in the Varoma bowl reaches an ideal temperature of 37-38°C thanks to the heat generated by the water in the Thermomix bowl. This heat, combined with the humidity, allows the yeast to act optimally, doubling the dough's size in just one hour.
The dough should have doubled in size. When gently pressed with a finger, the surface should slowly return to its original shape.
After fermentation, cleaning the Varoma bowl is quick and easy. Here are some tips:
