Octopus and Potato Foam with Thermomix

Preparation of Octopus and Potato Foam with Thermomix:
To begin preparing this tempting recipe, you should first cook the octopus in your preferred method, either in water or on the grill – either way, it will turn out great. Once the octopus is cooked, cut it into thin slices and set aside until the dish is assembled.
Next, add the water and bay leaves to the Thermomix bowl and set the machine to:
12 minutes / 100°C / Speed 1. While the water boils, wash, peel, and cut the potatoes into small pieces. Set them aside until the Thermomix time is up.
After the 12 minutes of boiling, add a pinch of salt to the water, place the potato chunks into the Varoma basket, and place it in the Thermomix bowl. Be careful not to burn yourself with the steam or the water. Set the Thermomix to:
20 minutes / Varoma temperature / Speed 1.
Once the potatoes are cooked, carefully remove the Varoma basket with the spatula and discard the water. Now, add the cooked potatoes to the Thermomix bowl along with the heavy cream, some olive oil, salt, and pepper, and set the Thermomix to:
3 minutes / 70°C / Speed 4.
Once the emulsion is ready, transfer the contents of the Thermomix bowl into a piping bag to make it easier to fill the small cups or bowls where the Octopus and Potato Foam will be served. Be sure to wash and dry the Thermomix bowl thoroughly.
Next, pour a little olive oil into the Thermomix bowl to heat it, and set the Thermomix to:
1 minute / 100°C / Speed 1. Then, add the tablespoon of sweet paprika, and if desired, the ½ tablespoon of hot paprika. Set the Thermomix to:
10 seconds / Speed 3.
Now that the cooked octopus and sliced, the foam is in the piping bag, and the paprika oil is ready, it’s time to assemble the dish. Fill one-third of the small shot glasses with the potato foam from the piping bag, place a slice of octopus on top, and drizzle a little paprika oil over it. Repeat this process for each glass.
