Anise-flavored brioches filled with cream and whipped cream. Super delicious! I’m still waiting to replace my bionic wrist... jejeje. In the meantime, if the pain allows, I’ll keep posting a new pastry recipe every Friday. As always, it's a pleasure to share my work. I highly recommend these brioches!
DOUGH
550 g strong flour
18 g fresh yeast
90 g sugar (45 g white sugar and 45 ml inverted sugar)
1 egg
80 ml sunflower oil
240 ml milk
60 ml anise (optional, if omitted, subtract 40 g from the total flour)
Orange zest
A pinch of salt
PASTRY CREAM
500 ml milk
1 egg and 1 egg yolk
50 g cornstarch
80 g sugar
Vanilla extract
WHIPPED CREAM
400 ml heavy cream (for whipping)
45 g powdered sugar
OTHER INGREDIENTS
1 beaten egg (for brushing)
Sugar moistened with anise
DOUGH
Warm the milk and dissolve the yeast in it. Add all the ingredients along with the milk and yeast to the Thermomix bowl, and mix for 10 seconds on speed 4.
Let the dough rest for 20 minutes to hydrate the flour.
Knead the dough 3 times for 2 minutes each, with 5-minute resting periods in between.
Transfer the dough to a lightly greased bowl and cover it. Let it rise for about 2 hours (depending on the temperature of your kitchen).
Degas the dough by kneading it by hand for 1 minute.
SHAPING AND BAKING
Weigh the dough and divide it into 12 portions. Shape each portion into a ball. Cover and let them rest for 10 minutes.
Flatten each ball with your hand and form 30 cm long rolls. Make 4 braids of 3 rolls each.
Cover the braids and let them rise for about 1 hour.
Once risen, brush with the beaten egg and sprinkle with moistened sugar.
Preheat the oven to 170°C (340°F) with top and bottom heat and bake for about 25 minutes.
Turn off the oven and let the brioches cool on a wire rack.
PASTRY CREAM
Add all ingredients except for the vanilla to the Thermomix bowl and cook for 7 minutes at 90°C (194°F) on speed 4.
Add the vanilla and mix for 5 seconds on speed 5.
Transfer the cream to a bowl, cover with plastic wrap (in contact with the cream) to prevent a skin from forming.
WHIPPED CREAM
Place the very cold heavy cream into the Thermomix bowl and whip it semi-firm on speed 4.
Add powdered sugar and continue whipping until stiff.
FINISHING
Once the brioches are completely cooled, cut them in half with a serrated knife and fill with pastry cream and whipped cream.
